There’s nothing like an evening under the stars to take you back to the days
of early Polynesia to enjoy the traditional music, dances and food and fun of a
luau. Maui offers some fabulous luaus at popular hotels. There are three nightly
luaus hosted along Kaanapali Beach: the Hyatt Regency Maui's 'Drums of the
Pacific,' Maui Marriott Resort's 'Marriott Luau' and the ‘Royal Lahaina Luau,’
hosted by the Royal Lahaina Resort and one of Maui’s longest-running luaus. In
East Maui, the oceanfront Outrigger Wailea Resort Luau is offered four nights a
week.
What is a kalua pig and how do they prepare it? The main dish at any Hawaiian
Luau. Cooked in an "Imu" or underground oven. First a pit is dug 2-3 feet deep
and wide enough to hold the Pig selected to feed the size of your luau. Next a
large fire is built with Kiawe wood, large porous rocks are placed on the fire
to extract the heat of the fire. Once the rocks are red hot they are removed
from the fire and the wood that is not burned down taken out. The hot rocks are
now spread on the floor of the Imu and placed on the inside of the pig's body.
Banana stumps are then shredded and thrown over the hot rock floor of the Imu.
The banana stump becomes a moisture source for the Imu cooking. The Pig is now
placed on the top of the banana stump shreds and covered with banana leaves and
wet burlap bags, again to add moisture to the cooking process. The Pig is now
covered with a blanket to keep the moisture in and loose debris out. Next the
Pig is covered with 2 feet of sand. Cooking time is 7-9 hours and left over
zero.
